Workshops in Rimini: Our cookbook - part 1 (Italy, Finland, Poland)


During the first year of the project Italy was responsible for preparing the cookbook with Italian recipes. Below you can learn about Italian cuisine. We encourage you to prepare those meals at home!


Introduction to our cookbook

All the recipes of this short collection were made at home during Erasmus + meeting in Rimini, 12th - 18th April, 2015.

Why are they healthy?

       They are homemade: all home prepared food contains less salt, less sugar and less fats;
       Ingredients are fresh: seasonal fruit and vegetables come from organic farming;
       Only extra virgin olive oil is used: it contrasts the amount of  cholesterol level in arterial walls and it is rich in healthy components, particularly if it is used raw;
       we have chosen only organic rough flours  (1 - 2 types, whole wheat);
       we tried to use different spices instead of salt to reduce sodium content without affecting the flavour;
       cooking salt (CaCl)  has been substituted by iodized salt;
       we used, when possible, dried fruit, because it is a good source of essential trace elements and unsaturated fats;
       we tried to vary as much as possible the protein sources, preparing fish and white meat dishes and reducing red meat, because it is too rich in saturated fats;
       We substituted,where possible, pasta with rice;
       when preparing cakes, we used extra virgin olive oil instead of butter. We never used margarine, because, most of the times, it contains unwholesome oil;
       We tried to reduce any cooking method which requires frying and/or high temperature and/or long cooking time, because they can cause the formation of harmful, sometimes carcinogenic, substances;
       all the dishes are part of well-balanced and full meals;

RECIPE OF “PASSATELLI”


Ingredients for 4 people:
·        200g Breadcrumbs
·        150g  Grated Parmesan
·        Salt
·        4 Eggs
·        Nutmeg
·        Pepper
·        Lemon Zest

Preparation:
Prepare a good beef broth and cook it for at least 2 hours with a piece of beef, 1 celery, 1 carrot, 1 small onion and 1 tomato in 4-5 liters of water. When the broth is ready, put shelled eggs in a bowl and then beat them with a fork and add the grated Parmesan, breadcrumbs, a handful of salt, one nutmeg, a  few pinches of pepper and grated lemon zest.
                                     
Mix the ingredients well until the mixture is compact.
Take a little dough at a time and crush it in the masher. Cut with a knife passatelli and pour them into the pan with the broth until it boils.
When passatelli come to the surface, they are ready and you can serve them.
             








PESTO ALLA GENOVESE
Ingredients:
  • -100 gr.  basil
  • -40 gr. pine nuts
  • -100 gr.  Pecorino and Parmesan cheese
  • -100 gr. extra virgin olive oil (e.v.o.)
  • -1 or 2  cloves garlic
  • -6 gr. cooking salt
Preparation:
Crush garlic and salt in a mortar. Add basil leaves and in the end the pine nuts, the cheese and the oil. Mix all the ingredients and season your pasta.


In the original genovese receipt you can boil some pieces of potatoes, green beans, peas  with pasta, dreans all together and then season with pesto. 





 
TRADITIONAL " RAGU' " (MEAT SAUCE)

Ingredients:

·         1 carrot

·         1 celery

·         1 onion (white or red)

·         extra virgin olive oil (e.v.o.)

·         1 bottle of tomato sauce (home made)
·         few leaves of basil
·         table salt
·         1 glass of white wine
·         minced meat (the original recipe is with veal meat, but you can use any kind of meat)

Preparation:
Step 1
Wash and cut the carrot, the celery and the onion in small pieces.
Step 2
Put some e.v.o in the pan, heat it and then fry the vegetables until onion is golden.
Step 3
Add the meat and cook it till it is brown. Season with white wine and salt.
Step 4
When the meat is brown and the carrot is soft, add the tomato sauce. Boil it for 2 hours.



 


Baked fish from the Adriatic Sea.

_1 kg of Sardoncini (sweet anchovies), Calamari (squids) and Gamberetti (shrimps) for 8 people_

Ingredients:  
·         . sweet anchovies
·         . squids
·         . shrimps
·         . Breadcrumbs
·         . Garlic
·         . Parsley
·         . Extra virgin olive oil (e.v.o.)
·         . Salt
·         . Pepper
·         . Lemon

Preparation of breadcrumbs:
Mix breadcrumbs, parsley, garlic, salt, pepper and e.v.o.

Preparation of the fish:
Clean the fish and wash them.

Put the fish in the breadcrumbs, roll them and then put them in a casserole. 

Put the casserole in the pre-heated oven (150°-180°) for 15 minutes.

Squeeze lemon on the fish and pour e.v.o. on the plate when you serve it.










Recipe “Polpette italiane”
 Ingredients:
·         150g Grated Parmesan Cheese 
·         100g Breadcrumbs 
·         A bottle of tomato sauce (home made)
·         2 spoons of extra virgin olive oil (e.v.o.)
·         A clove of garlic
·         A few pinches of salt
·         3 Eggs
·         a pinch of pepper

Preparation:
Heat some oil in a pan with the garlic.
When the garlic gets golden add the tomato sauce and the salt. Meanwhile, fill a bowl with all the ingredients, then mix until you get a compact dough.
Then make some balls out of the dough.
Put them in the previously prepared sauce, simmer and serve.





Rice with fish

Ingredients for four people:

  • a tablespoon extra virgin olive oil (e.v.o.)
  • a handful of salt
  • -a few pinches of pepper
  • -salmon, shrimps, squids, cuttlefish
  • eight handfuls of rice
  • a little parsley
  • -half a clove garlic
  • A lot of water

Preparation:

Boil the water in a pot, add the rice.
Put the garlic and the evo oil in a pan and let it fry
Add the fish
Chop the parsley and then add it to the pan. Just before the rice is ready, drain it and add it to the fish in the pan
Cook for five minutes

  








Spaghetti with tomato sauce

Ingredients for 4 people:

  • some little tomatoes
  • -fresh basil
  • two little cloves of garlic
  • -a tablespoon extra virgin olive oil (e.v.o.)
  • a few pinches of salt
  • 400g spaghetti
                                                       
Preparation:

Boil some water with a half  spoon of cooking salt.
Cut some little tomatoes into four parts and put them in a bowl.

Meanwhile put  some oil and the garlic in a big  pan, let it fry for a few minutes.
Then add the and some salt.
Then cook the tomatoes until they are soft.

Take out the little clove of garlic.
Now put some basil in the tomato sauce.

When the water is boiling put spaghetti in the water for 7-8 minutes
When the pasta is cooked, drain it and put it
in the pot with tomatoes sauce.











Spaghetti alla carbonara

Ingredients for 4 people:

_2 eggs
_200gr bacon
_Parmesan cheese
_a tablespoon extra virgin olive oil (e.v.o.)
_360 gr spaghetti
_half an onion
_cooking salt and pepper to taste

Preparation:

To prepare spaghetti carbonara bring to a boil a lot of water, add a handful of salt and the spaghetti. The spaghetti should be cooked for ten minutes.

Meanwhile, cut the onion and fry it with a little e.v.o. in a pan, when it turns gold, add the bacon cut into strips or small cubes.

When the bacon becomes slightly crispy, remove from heat and let it cool down.
Meanwhile, beat the eggs in a bowl with a little salt and pepper.

When the spaghetti is cooked, add it to the bacon and pour the eggs, mixing it all.
Serve spaghetti carbonara with the addition of some Parmesan or Pecorino cheese.











Recipe   “Crostini”

Ingredients:
·         Bread slices
·         Extra virgin olive oil (e.v.o.)
·         Personal toppings

Preparation:
Heat the bread slices on a flat pan until they are crusty then add e.v.o.
When the bread slices are ready top them with the ingredients.






Recipe for “gratin vegetables”

Ingredients:
·         2 red peppers
·         2 yellow peppers
·         3 tomatoes
·         3 eggplants
·         Breadcrumbs
·         Extra virgin olive oil (e.v.o.)
·         Salt
·         Peppers
·         Parsley

Preparation:
Wash and cut in half the peppers, the tomatoes and the eggplants.
 Empty the vegetables and grill them.
In a bowl season the breadcrumbs with salt, peppers, parsley and e.v.o.
Fill the vegetables with the seasoning.
Cook for 20 minutes in pre-heated oven at 150 degrees.
Taste it with piadina.





Recipe for piadina.
‘’La j'è bona in tot i mud,
la j'è bona énca scundida
sa' n'avì ancora capì,
a scor propri dla pida.’’

Ingredients for 6 piadine:
·         1-type flour  500 g
·         Lard  125 g
·         A few pinches table salt
·         Water  90 ml
·         Yeast 7,5 g
·         Honey  5 g
·         Sugar  15 g
·         Milk  100 ml

Preparation:
On a wooden board put the flour, the sugar, the milk, the honey the yeast and the lard.
Mix all the ingredients and add little by little the water and the salt.
Make a smooth dough, wrap it in some film.
Let it yeast for an hour.
Then make 6 small balls out of the dough and roll them out with a rolling pin.
Heat a pan (a “testo”, a flat pan, would be the ideal utensil) and cook each piadina on both sides for 2 minutes cut it and serve it.




PIADIZZA RECIPE



Ingredients:
·         Fresh tomato sauce (home made)
·         Mozzarella cheese
·         Oregano
·         Salt
·         Piadina

Preparation:

Put fresh tomato sauce on the piadina ( 3-4 spoons of tomato sauce).

Chop the mozzarella cheese (just a half mozzarella) and put it on the piadina.

Add a little bit of salt and oregano.

Turn on the oven to 180 degrees and wait 10 minutes, then put piadizza into the oven and when mozzarella cheese melts, take it out.








Pinzimonio

Ingredients for 4 people:

  • 2 cucumbers
  • 3 carrots
  • 2 fennels
  • 2 pepperonis
  • 4/5 spring onions
  • Some radishes
  • 1/2 tablespoons of extra virgin olive oil (e.v.o.)
  • a few pinches of salt
  • a few pinches of pepper
  • a tablespoon of lemon juice

Preparation:

- Wash and cut the vegetables.
- Mix oil, salt, lemon and pepper in a glass.
- Dunk the vegetables in the seasoning.





Pizza recipe

Ingredients:
·         1-type flour 500g
·         warm water 250/300ml
·         1 cube yeast of beer
·         half glass extra virgin olive oil (e.v.o.)
·         1 spoon salt
·         1 spoon sugar
·         Half a bottle tomato sauce (home made)
·         Mozzarella cheese
            
Preparation:
Melt the yeast with some water, sugar and a tablespoon of flour for 10/15 minutes.
Then mix the flour, the water with the yeast of beer.
Add the water with e.v.o. and salt, until you get a soft and homogeneous dough.
Leave it to rise 2 or 3 hours, according to the temperature.
Roll it out and season your pizza according to your taste.
Bake it in pre-heated oven (200°-220°) for 15-20minutes.








Garnish food:Tomatoes

Ingredients:
                     Tomatoes
                     Extra virgin olive oil (E.V.O.)
                     Vinegar
                     Table salt
                     Oregano

Step 1
Cut the tomatoes in many medium pieces

Step 2
Season the pieces with E.V.O.,vinegar,table salt and oregano (you choose how much of quantity of the ingredients)
